We are seeking a highly skilled Sous Chef to join our culinary team at The Star Brisbane, Australia's newest entertainment hub. This is an exciting opportunity to work with a talented team of chefs and contribute to the success of our luxury hotel and dining experiences.

Company Overview

The $3.6 billion Queen's Wharf Brisbane development is being delivered by Destination Brisbane Consortium - a joint venture led by The Star Entertainment Group alongside its partners. When complete, Queen's Wharf Brisbane will deliver four new luxury hotels, more than 50 new food and beverage experiences, significant luxury retail, the restoration of nine heritage buildings and around 1,500 residential apartments.

Salary and Benefits

The successful candidate can expect a competitive hourly rate, penalty rates for working nights, weekends, and public holidays, and up to 30% Discounts across award-winning restaurants and accommodation.

Job Description

We are looking for a seasoned Sous Chef with high volume culinary experience, a strong knowledge of food safety regulations, and a Trade certificate in Commercial Cookery (or equivalent qualification). The ideal candidate will have excellent leadership skills, be able to mentor and develop junior staff, and maintain high standards of quality and presentation.

Responsibilities

  • Mentor and develop junior chefs
  • Oversee kitchen operations, ensuring efficient service delivery
  • Ensure compliance with food safety regulations
  • Develop and implement menu ideas and promotions

Requirements

  • Trade certificate in Commercial Cookery or equivalent
  • High volume culinary experience
  • Strong knowledge of food safety regulations
  • Excellent leadership and communication skills
