We're seeking an experienced and event driven Executive Sous Chef to support our Head Chef in leading kitchen operations across multiple outlets, from our bustling restaurant and bars to our renowned weddings, private events and large-scale functions.
This is an exciting opportunity for a passionate hospitality professional to bring creativity, consistency and strong leadership to a venue known for excellence in both à la carte and event catering.
A Day in the Life:
- Partner with the Executive Chef to deliver outstanding culinary experiences across all food operations, restaurant, bar, events and in room dining.
- Lead the planning and execution of high volume weddings, corporate functions and special events, ensuring flawless delivery and consistency of quality.
- Drive seasonal menu development that balances creativity, customer trends and operational efficiency.
- Mentor and motivate a large, diverse kitchen team, fostering collaboration and professional growth.
- Oversee kitchen logistics, food safety and quality control across multiple service areas.
- Manage food costs, budgets and stock control, ensuring financial performance aligns with venue targets.
- Work closely with suppliers and the events team to deliver tailored menus for bespoke occasions.
- Maintain strict WHS and HACCP compliance while promoting a positive, safe workplace culture.
What You'll Bring:
- Minimum 10 years experience as a qualified chef with demonstrated success in senior kitchen leadership roles.
- Proven experience in a senior kitchen leadership role within a high volume event focused hotel or premium hospitality venue.
- Expertise in both à la carte and large-scale event catering with a strong eye for detail and presentation.
- Exceptional leadership, time management and organisational skills.
- Financial acumen with the ability to manage costs, portioning and yield effectively.
- Strong communication and stakeholder management skills with a collaborative and hands on approach.
- Certificate III or above in Commercial Cookery.
- Flexibility to work across varying shifts, including weekends and evenings to support events and service operations.
