The Role

As the Sous Chef of the Byron Bay Oyster Bar, you will assist in overseeing the operation of this exciting new venue. Reporting to the Head Chef, you will have the opportunity to shape and elevate the restaurant into a standout dining destination. You will work closely with the Culinary Director to deliver high-quality cuisine while maintaining the unique atmosphere of Hotel Marvell. Your role will involve creating and curating the menu, maintaining excellent kitchen standards, and ensuring exceptional food quality.

To be successful in this role, you will have:

  • Culinary Diploma
  • Previous Sous Chef experience in a high-end, fast-paced venue
  • Proven ability to lead, motivate, and develop a team
  • Experience with handling and maintaining live seafood
  • Strong business acumen and financial management experience
