Sofitel Sydney Wentworth is seeking an experienced Senior Breakfast Operations Manager to join our culinary team.

Job Description

This role offers a unique opportunity to work with our world-class dining precinct, where you will be responsible for overseeing the management of the kitchen team and ensuring the highest standards of food quality and presentation. As part of this team, you will play a crucial role in maintaining efficient kitchen operations, implementing menu concepts, and driving innovation in our culinary offerings.

Key Responsibilities:
  • Manage daily food service and on-site kitchen operations to meet hotel standards.
  • Establish and maintain control procedures to ensure smooth kitchen operations.
  • BUILD a strong multi-site kitchen team that efficiently utilizes people, resources, and equipment.
  • Maintain high-quality food standards, preparation, presentation, and cooking techniques aligned with Accor's Brand Standards.
  • Coordinate the stewarding team to meet kitchen requirements.
  • Collaborate with the Executive Chef and Executive Sous Chef to develop new menus and concepts.
  • Work closely with Restaurant Managers and Supervisors to achieve food and beverage operational objectives.
Requirements

To succeed in this role, you will need:

  • A minimum of 4 years' experience as a Sous Chef, with a proven track record of success in similar roles.
  • Experience with rostering and forecasting to drive efficiency and productivity.
  • The ability to implement and maintain policies and procedures to ensure smooth kitchen operations.
  • Strong managerial skills and operational leadership to motivate and guide your team.
  • Excellent team building and employee relations skills to foster a positive working environment.
  • The ability to create recipe cards and maintain high-quality food standards.
  • A Food Handler Certificate and Trade Certification Level 3 (Level 4 preferred but not essential).
  • Full Australian Working Rights.
