Job description:

· Cook and prepare menu items to a consistently high-quality standard, ensuring the uniform serving size, taste and appearance of all meals prepared.

· Supervise and coordinate the activities of junior kitchen staff to ensure the smooth operation of the kitchen.

· Oversee and manage kitchen operations in the absence of the Head Chef, ensuring conformance with restaurant standards.

· Assist the head chef and director to plan and develop recipes and menus, considering factors such as seasonal availability of ingredients, portion size and final menu price.

· Assist the Head Chef in menu costing and budget management to optimise profitability.

· Monitor and enforce stringent sanitation, cleaning and hygiene practices.

· Inspect kitchen to ensure conformance with relevant food safety and occupational health and safety standards.

· Provide instruction and training to junior kitchen staff, imparting culinary knowledge, cooking techniques and skills to support their professional development.

· Continuously stay up-to-date with culinary trends, techniques and industry developments.

· Ensure the correct preservation and storage of ingredients to reduce levels of wastage and lower costs.

· Monitor inventory, placing orders as required for ingredients and supplies to ensure the kitchen remains adequately stocked.

· Liaise effectively with sales representatives and suppliers to negotiate the cost of goods.

· Collaborate with the Head Chef to determine production schedules and staff requirements necessary to ensure timely delivery of services.

Qualifications/Attributes:

· Must hold a Diploma or Higher and including Certificate IV in Commercial Cookery or at least 3 years of relevant work experience in lieu of the qualification

· Must possess at least 2-3 years of relevant work experience.

· Have outstanding communication and leadership skills.

· Must have the willingness to collaborate with other colleagues.

· Must be obsessed with cooking, including unique and emerging trends.

· Must have good planning and organisational skills.

· Ability to adapt and work in a fast-paced environment.

Salary: $75,000 p.a. excluding superannuation.
