About the role
' Taverna', a lively Greek restaurant right at the top end of Brunswick East, is excited to find a passionate and experienced Sous Chef to become a part of their culinary family. As Sous Chef, you'll be a key player, working closely with the Head Chef to oversee all kitchen activities and help create memorable dining experiences for our guests in an open kitchen. An interest in or experience with cooking over fire is a must.
As Sous Chef, you will play a pivotal role in supporting the Head Chef in overseeing all kitchen operations and ensuring the nurturing and management of the team. We take pride in looking after every team member, providing an exceptional standard of care towards all departments of our restaurant.
This is a full-time position based in our vibrant restaurant in Brunswick East, Victoria.
What you'll be doing
- Assisting the Head Chef in managing all aspects of kitchen operations, cooking with fire, food preparation, and team supervision, including off-site events
- Display exemplary leadership and passion for the genuine authenticity of the cuisine we serve
- Effective management and communication of a diverse team
- Experience in managing and maintaining food safety program, including documentation
- Rostering and ordering experience
- Monitor and supervise OH&S standards and procedures. Adhering to all food safety and hygiene regulations to maintain a safe and compliant kitchen
- Ability to build and maintain effective relationships, team building
- Genuine interest in the day-to-day operations, including forward planning of the booking system
- Understanding of financial budgets, food and labour costs is advantageous
- Outstanding time management during preparation and service times
- Overseeing the proper storage, handling, and inventory of all kitchen ingredients and supplies
- Proficiency in Excel and Food Cost Applications, Time Scheduling
- Providing leadership, mentorship, and training to the kitchen staff to foster a positive and productive work environment
- Full availability in line with the needs of the business, in the respective leadership role
What we're looking for
- Minimum 2-3 years of experience as a Sous Chef or in a similar leadership role within a high-volume restaurant or catering environment
- Exceptional culinary skills and a deep understanding of food preparation techniques, flavour profiles, and presentation
- Strong problem-solving and decision-making abilities, with the capacity to work well under pressure
- Excellent communication and interpersonal skills to effectively manage and motivate a team
- Demonstrated commitment to maintaining high standards of food safety and hygiene
- Passion for creating exceptional dining experiences and a deep appreciation for the hospitality industry
