**Job Title:** Executive ChefA great opportunity exists for a dynamic and experienced Executive Chef to lead our kitchen team in Regional Victoria, South Gippsland.We are looking for someone who can build, expand, and develop the menu, while strengthening the reputation of our hotel as a destination venue.
  • We require an individual with a 'can do' attitude, excellent leadership skills and ability to tick the majority of the following items:
Duties:
  • Develop menus and plan dishes to meet customer preferences
  • Estimate food and labor costs to maintain profitability
  • Liaise with suppliers to source seasonal and local produce
  • Monitor quality of dishes at all stages of preparation and presentation
  • Ensure hygiene regulations are met and maintained
  • Lead, train, and nurture staff with effective leadership skills
  • Run your own kitchen autonomously
  • Prepare and serve meals with pride and attention to detail
  • Manage and maintain stock efficiently to minimize waste
  • Maintain accurate records of expenses and wastage
  • Maintain an immaculately clean kitchen environment
  • Work at pace and be flexible with client requests

Skills and Qualifications:
