Executive Sous Chef

We are seeking a highly skilled and experienced Executive Sous Chef to join our culinary team at AccorHotel. As a key member of our kitchen team, you will be responsible for assisting the Executive Chef in daily operations and overseeing food preparations in our à la carte and banqueting kitchens.
Key Responsibilities:
- Assist the Executive Chef in daily kitchen operations and oversee food preparations in the à la carte and banqueting kitchens.
- Develop and test new recipes and seasonal menus that highlight flavour and creativity.
- Supervise, train and develop kitchen staff, fostering a collaborative, inclusive and high-energy working environment.
- Oversee and uphold food quality and hygiene standards in our kitchen operations, including banquets and à la carte restaurants.
- Manage inventory, order supplies and minimise waste to optimise kitchen efficiency.
- Facilitate and promote a collaborative interdepartmental work environment throughout the hotel.
Requirements:
- Previous experience in à la carte and banqueting operations.
- Strong understanding of seasonal menu creation and design.
- Strong knowledge of Food Safety (HACCP).
- Ability to inspire, nurture and lead a creative diverse culinary workforce.
- Previous experience with working with a large fast-paced culinary operation.
