Executive Sous Chef

We are seeking a highly skilled and experienced Executive Sous Chef to join our dynamic kitchen team at Pullman & Mercure Melbourne Albert Park.
As a key member of our culinary team, you will assist the Executive Chef in daily kitchen operations, overseeing food preparations in the à la carte and banqueting kitchens. Your creative approach to menu development will be essential in designing and testing new recipes and seasonal menus that showcase flavour and creativity.
You will be responsible for supervising, training, and developing kitchen staff, fostering a collaborative and inclusive work environment that promotes high energy and productivity. Your attention to detail and commitment to upholding food quality and hygiene standards will be crucial in ensuring our kitchen operations meet the highest standards.
Additionally, you will manage inventory, order supplies, and minimize waste to optimize kitchen efficiency. Your ability to facilitate and promote a collaborative interdepartmental work environment throughout the hotel will be essential in driving success.
About YouWe are looking for a candidate with a background in both à la carte and banqueting operations, a creative approach to menu development, and a desire to achieve above the expected. Your ability to inspire, nurture, and lead a creative diverse culinary workforce will be essential in driving success.
You will have previous experience working with a large fast-paced culinary operation, with a strong understanding of seasonal menu creation and design. Your knowledge of Food Safety (HACCP) and ability to effectively interact and communicate with staff, management, and vendors will be crucial in ensuring our kitchen operations run smoothly.
