About the Role

We are seeking an experienced and skilled Chef de Partie to join our team at Pullman & Mercure Melbourne Albert Park. As a key member of our culinary team, you will play a vital role in delivering exceptional dining experiences for our guests.

The successful candidate will be passionate about producing high-quality dishes that showcase creativity and flair. With expertise in fast-paced kitchen operations, you will lead by example and mentor junior team members to achieve our high standards.

In this dynamic role, you will have the opportunity to contribute to menu design, supervise kitchen teams, and implement food hygiene protocols. Your ability to work under pressure, maintain quality standards, and promote a positive working culture will be essential in driving success.

Key Responsibilities
  • Prepare and present food for breakfast, a la carte dinner, in-room dining, and banqueting in accordance with hotel standards.
  • Supervise and train kitchen team members to ensure seamless service delivery.
  • Collaborate with the Executive Sous Chef and Executive Chef to develop seasonal menus and daily/weekly specials.
  • Maintain the highest standards of quality, freshness, and presentation in all meals prepared.
  • Implement and enforce food hygiene protocols in line with legislative requirements.
  • Assist in ordering and stock control to minimize waste and optimize inventory.
Requirements
