Executive Chef Position Available

The Park Hotel Ballarat is seeking a highly skilled Sous Chef to join our culinary team.
The successful candidate will be responsible for supporting the head chef in the daily running of the kitchen and undertaking his responsibilities in case of absence.
Key duties and responsibilities include:
Menu Development:
Review the menu periodically and propose new dishes in accordance with seasonal products.
Cost Control:
Calculate costs involved in new dishes and cost changes in existing menu.
Team Management:
Ensure junior staff perform right cooking techniques, portioning and presentation of dishes.
Compliance:
Monitor compliance of hygiene and OH&S regulations within the kitchen environment.
Ingredient Management:
Check freshness of ingredients and products are used as per method FIFO.
The ideal candidate will have a Certificate IV in Commercial Cookery, at least 2 years of experience as a chef, and the ability to produce high quality dishes under pressure and fast paced environments.
They will also have solid knowledge of sanitary and OH&S regulations and flexibility to work nights, weekends and public holidays.
