The Park Hotel Ballarat is seeking a highly skilled Sous Chef to join our culinary team.
As a key member of our kitchen team, you will be responsible for supporting the head chef in the daily running of the kitchen and undertaking his responsibilities in case of absence.
You will also be responsible for reviewing the menu periodically and proposing new dishes in accordance with seasonal products, as well as calculating costs involved in new dishes and cost changes in existing menu.
Additionally, you will be responsible for ensuring junior staff perform right cooking techniques, portioning and presentation of dishes, and monitoring compliance of hygiene and OH&S regulations within the kitchen environment.
The ideal candidate will have a Certificate IV in Commercial Cookery and at least 2 years of experience as a chef, with a strong ability to produce high quality dishes under pressure and fast paced environments.
They will also have a solid knowledge of sanitary and OH&S regulations, and be flexible to work nights, weekends and public holidays.
