Moody, monochromatic, and intimate, Moonlight is a contemporary hibachi grill and wine bar located just a stone’s throw from the Byron foreshore. Here, you’ll find a concentrated menu that showcases classical Japanese cuisine, reinterpreted in unexpectedly bold and flavorful ways. Alongside our culinary offerings, there’s a sophisticated cocktail menu and a broad selection of biodynamic wines, all chosen at the peak of their lunar cycle.
We are currently seeking enthusiastic Chefs to join our talented team.
POSITION SUMMARY
The Line Chef at Moonlight Hibachi Grill and Wine is responsible for preparing food to exact specifications and standards while setting up stations for the menu. As a line chef, you will take ownership of your section, guide junior chefs, and maintain a solid understanding of all sections in the kitchen. You’ll work under the direction of the Head Chef and Sous Chef, ensuring the smooth and efficient operation of the kitchen. This role involves setting up and stocking stations, maintaining a positive and professional approach, and executing tasks with accuracy and speed.
ABOUT YOU
- Sound communication skills
- Experience in a fast-paced, high-volume venue (essential)
- A positive approach to fellow team members and FOH staff
- Experience with Japanese ingredients preferred but not essential
- Punctual, reliable, and able to operate well under pressure
- Able to cook and prepare dishes according to company specifications
- Committed to maintaining food and hygiene standards
- Able to follow recipes and specs to company standards

KEY RESPONSIBILITIES
- Adherence to Standards: Ensure consistent maintenance of company standards in quality, service, presentation, and cleanliness in the kitchen.
- Staff Training and Development: Lead the training of junior chefs and maintain a culture of continuous improvement and skill enhancement. Ensure compliance with all company procedures.
- Communication: Actively facilitate positive communication between FOH and BOH teams to ensure smooth kitchen operations.
- Food Safety: Ensure all kitchen staff are trained and working in accordance with Moonlight’s Food Safety program. Collaborate with the Head Chef to manage WHS aspects of the BOH.
- Auditing: Work towards high scores in all inspections and audits conducted within Arcade Agency.
- Teamwork: Collaborate with fellow managers to maximise the restaurant's potential, both as an individual venue and as part of the Arcade Agency Group.
- Supplier Management: Work with the Head Chef to monitor food costs (COGS), manage communication with suppliers regarding price changes, and adjust GP as needed.
For the right candidate, there’s the possibility of this role being shared between Moonlight Hibachi Grill and Wine and our sister venue, The Smoking Camel.
