Tijuana's in Manly is seeking an experienced and passionate Head Chef to join our team at a lively Mexican/South American Bar & restaurant.

Salary: $95K - $100K + Super

What we are looking for:

  • Highly skilled chef with Latin American/ Mexican fusion style chef experience
  • 2-3 years head chef experience
  • Current or quite recent existing head chef looking for a change in the new year
  • capability and experience to oversea a venue with capacity of 75-80 with multiple turn overs, reliably does over $40-50k in food per week.
  • maintain or improve a 4.6 rating

  • Creative, passionate and driven

  • Be hands on, leads by example, believes this is essential to fostering respect.

  • Work well with Med/ European/ Seafood/ Mexican/ Latin American / nikkei fusion
  • Responsible for all ordering/ invoices
  • Run cogs at 28-31%.
  • Do rosters & runs FOH + BOH labour to 35%.
  • Do all menu development & supplier work.
