Known for its spectacular water front location in the heart of The Rocks, 6 HEAD is part of an incredibly organised and well structure team. Despite the intensity of the large covers and the high standards, we provide a welcoming, stable and nurturing work environment.
Now we are looking for you A Sous Chef to start straight away in our premium steakhouse restaurant: Think of a journey over time, a beautiful menu inspired by seasonality, a passionate A-Team and a challenging new restaurant.
Day to day responsibilities:
- Developing and maintaining service standards in a premium/refined restaurant environment to ensure a world class hospitality experience.
- Strong, natural leadership qualities with the ability to motivate and mentor a team.
- Proven ability to work in high pressure/ high volume environment with strong decision-making skills and work with a sense of urgency.
- Understanding of financials and budget control – including labour control, stock management, wastage and cost of goods.
- Management of daily restaurant operations whilst meeting company objectives and key performance indicators
- Creating and building on relationships with our guests, employees and clients
- Ability to mentor, think on your feet and have a lot of fun
What are we looking for?
- Great eye for detail and dish presentation
- Butchery and dry ageing experience
- Kitchen management experience in similar position
- Experience as a leader of a high volume venue, with a thorough understanding of kitchen and labour budgets
- Enjoys working with seasonal produce and able to convert that into dish in accordance to seasonality
- Ability to meet company objectives and key performance indicators
- Impeccable presentation, hygiene and grooming standards
- Advanced understanding and appreciation of all aspects of food and its service
- Ensure compliance with all OHS legislation (act and regulation)
