Belle Futures Pty Ltd have an excellent opportunity for a full-time Sous Chef to join our team.
The successful candidate will be responsible for:
The Sous Chef is the second-in-command in the kitchen and plays a vital role in delivering consistently high-quality food and smooth daily operations. Working closely with the Head Chef, the Sous Chef assists with menu execution, staff supervision, stock control, and maintaining the highest standards of food safety and presentation.
Key Responsibilities
Kitchen Operations
- Oversee daily food preparation and ensure all dishes are prepared to recipe, portion, and quality standards.
- Supervise kitchen staff during service, providing clear direction and support.
- Assist in planning and executing daily prep schedules to meet service demands.
- Maintain a clean, organised, and safe working environment in accordance with food safety regulations (HACCP).
- Monitor food production to reduce wastage and maintain cost efficiency.
Menu & Food Quality
- Work with the Head Chef to develop and test new menu items, specials, and seasonal offerings.
- Ensure accurate plating and presentation of all dishes leaving the pass.
- Assist in costing recipes and controlling food margins to meet budgeted targets.
Team Leadership & Training
- Mentor and train junior chefs, apprentices, and kitchen hands in technique, hygiene, and efficiency.
- Support a positive team culture by fostering clear communication between kitchen and front-of-house staff.
- Step in to lead the kitchen in the absence of the Head Chef.
Ordering & Stock Control
- Monitor stock levels and assist in ordering ingredients to meet service requirements.
- Check deliveries for quality, freshness, and accurate quantities.
- Rotate stock and manage storage to minimise waste and maintain freshness.
Health, Safety & Compliance
- Ensure all food is prepared in compliance with food safety standards and local health regulations.
- Maintain accurate records for temperature checks, cleaning schedules, and wastage.
- Report equipment faults or hazards promptly.
Applicants for this position should:
- Have relevant formal qualifications
- At least 3 year of relevant full-time experience, in addition to formal qualifications
- In some cases, a number of (3-5) years fulltime employment may be considered in place of formal qualifications
- Certificate IV in Commercial Cookery
