About our ideal Sous Chef

Sous Chef is a professional responsible for ensuring that nothing goes wrong in the kitchen. From ordering ingredients to keeping an accurate inventory list and ensuring cleanliness everywhere they go, they provide the Head Chef with everything they need to create dishes for the clients. This includes hiring, training, and assisting in overseeing kitchen staff, ensuring a high-quality, cost-effective product, and following food safety regulations

Key Responsibilities:

  • Ensure food is prepared in line with Navarra recipe cards, this includes and is not limited to suppliers, portions, method, and presentation.
  • Assist in managing and coordinate day-to-day operations within the kitchens
  • Ensure Navarra standard food cost levels are always maintained, ordering processes and wastage controls are to be adhered to.
  • Assist in stock takes as per Navarra guidelines.
  • You are to review and ensure the menu presentation is to Navarra standards for every dish.
  • Liaise with external representatives and suppliers to ensure the correct and timely delivery of produce, supplies and equipment.
  • Be familiar and aware of price negotiations with external representatives and suppliers and present wins and concerns to Head Chef or Executive Chef.
  • Manage and motivate all kitchen staff to deliver premium quality meals to customers.
  • Prepare, cook, and present food to order in line with all food hygiene standards and company guidelines.
  • Keep in touch with current trends and suggest new ways of presenting dishes.
