CHEF/COOK (ASIAN CUISINES - Yum Cha)

We are seeking a skilled cook and chef to prepare and cook food in our well-established Yum Cha and seafood restaurant. Applicants should meet equivalent to ANZSCO Skill Level (eg. 2 or 3) requirements, and prior experience in an Asian restaurant is preferred.
Main Duties (Chef):
(a) be able to plan traditional Chinese food including Yum Cha menus, estimating food and labour costs, and ordering food supplies;
(b) discuss food preparation issues with managers, chefs and kitchen and waiting staff;
(c) examine foodstuffs to ensure quality;
(d) prepare raw materials and cooking equipment for Asian foods;
(e) demonstrate Asian foods including Yum-Cha techniques and advising on cooking
procedures;
(f) monitor quality of dishes at all stages of preparation and presentation;
(g) portion food, place it in dishes, add gravies or sauces;
(h) season food during cooking;
(i) on occasion to prepare special request items;
(j) be responsible for the operation of all kitchen equipment in the kitchen, and store food in
temperature controlled facilities;
(k) plan the method and order of work;
(l) select and measure the correct quantities of ingredients observing freshness and quality;
(m) regulate temperatures of ovens, and grills and other cooking equipment; freeze and
preserve foods;
(n) explain and enforce hygiene regulations, and comply with workplace procedure for health,
safety and security; and
(o) assist in training junior cooks or apprentices.
Specialist knowledge and skills
Ability to manage time, set priorities, plan and organise one's own work
Main Duties (Cook):
(a) Prepare and cook food (including seafood dishes).
(b) Regulate oven and cooking temperatures, freeze and preserve foods, and ensure strict prevention of cross-contamination.
(c) Inspect food ingredients to ensure quality and freshness.
(d) Portion food, plate dishes, and add sauces and garnishes.
(e) Assist in menu planning and estimating food requirements under the supervision of the (head) chef.
(f) Prepare equipment for Yum Cha service and accommodate special dietary requirements as needed.
(g) Portion food, arrange in serving dishes, and add sauces.
(h) Season food appropriately during cooking.
(i) Store food in temperature-controlled facilities, and maintain cleanliness and sanitation of the kitchen, tools, and workstations.
(j) Prepare and serve dishes promptly, especially during peak service hours.
(k) May assist in training junior cooks and apprentices under the (head) chef's guidance.

Pay: $75,000.00 – $80,000.00 per year
