About the role
Meltemi Mediterrania is seeking an experienced Executive Sous Chef to join our dynamic team. This full-time role will be based in our restaurant located in Broadbeach, Queensland. As the Executive Sous Chef, you will play a crucial role in supporting the Head Chef and overseeing the smooth running of the kitchen operations.
What you'll be doing
- Assist the Head Chef in managing and leading the kitchen team to deliver exceptional culinary experiences
- Take charge of the kitchen in the Head Chef's absence and ensure seamless workflow and high-quality food production
- Participate in menu planning and development, contributing ideas and techniques to enhance the restaurant's offerings
- Oversee food preparation, presentation, and portion control to maintain consistent standards
- Mentor and train junior chefs, fostering their skills and professional growth
- Ensure adherence to food safety regulations, kitchen hygiene, and cost control measures
- Collaborate with the wider team to deliver exceptional customer service and a memorable dining experience
What we're looking for
- Minimum of 5 years of experience as an Executive Sous Chef or equivalent role in a similar high-volume restaurant setting
- Formal culinary training or qualifications in hospitality/culinary arts
- Proven track record of leading and motivating a kitchen team to deliver consistently high-quality dishes
- Proven ability to manage kitchen operations efficiently and calmly under pressure
- Strong knowledge of food safety, hygiene, and cost control practices
- Effective communication and interpersonal skills to collaborate with the wider restaurant team
- Strong knowledge of Coastal Mediterranean cuisine and ingredient-driven cooking
- Experience with rotisserie is highly advantageous
