Restaurant Hubert has an exciting opportunity for an experienced Sous Chef to join the team.

Restaurant Hubert is one of downtown Sydney's busiest and most loved venues. We offer classic French cuisine, an extensive international wine list and showcase some of the city's finest live jazz music. We pride ourselves on extending warm and knowledgeable service, incredible ambience and delivering a magical experience for every guest.

About the Role

The Sous Chef works closely with the Head Chef to lead the kitchen team, manage and assist in running services, and maintain high culinary standards. This role also focuses on staff development and smooth back-of-house operations.

Key Responsibilities

  • Lead and support the kitchen team with clear communication and consistency.
  • Maintain Hubert's refined service rhythm and uphold high standards.
  • Contribute to menu development, testing, and seasonal rollouts.
  • Ensure all dishes align with the Hubert's brief and culinary direction.
  • Deliver exceptional guest experiences through precision, flavour, and presentation.
  • Collaborate with front-of-house for seamless service.
  • Manage preparation, mise en place, and stock rotation efficiently.
  • Maintain a clean, organised, and well-structured kitchen environment.
  • Train, mentor, and develop junior chefs.
  • Support a positive, respectful, and professional kitchen culture.
  • Uphold Swillhouse Core Values through strong leadership and accountability.
  • Ensure compliance with Fair Work and WHS requirements.
  • Report and record incidents accurately and promptly.

Skills and Experience

  • Ability to manage and lead the team, holding them accountable for their tasks
  • Excellent communication skills and a passion for hospitality.
  • Understanding and maintaining cleanliness and hygiene standards
  • Experience in all aspects of kitchen management
  • Ability to work consciously and independently
  • Work in a well organised and structured manner
  • Knowledge of safety regulations and compliance standards
