Sommelier

Sydney-based hospitality group, Liquid & Larder, are searching for an experienced charismatic Sommelier to join the team at Bistecca.

About The Venue:

The Bistecca experience begins by pulling up a stool or a candle-lit table in the old-world, wood-panelled cocktail bar, stocked with amaro from across the world, including our Four Pillars classic Negroni. Moving into the intimate 50-seat restaurant, you're greeted by refined Tuscan hospitality. From the table, take in our famous Bistecca butcher's block and open hearth, which fills the dining room with timeless warmth. The space then flows to a bottle-lined enoteca (wine room) available for private dining.

Bistecca is fast paced, though our guests are met with a warm, timeless and nostalgic feeling, that is sincere and welcoming. We want them to feel comfortable, and still have a sense of the raw, rustic, and a little bit of cheek

About The Role:

You will bring sharp attention to detail and confident communication, ensuring every guest experience feels seamless, intuitive, and personal..

Working closely with the small wine team, you'll share passion and knowledge, inspire excellence, and engage both staff and guests with your expertise. Your drive for teamwork gives you the versatility to support the floor as needed, at times you may be called upon to manage our private dining rooms without the assistance of the waitstaff, requiring you to understand all aspects of our sequence of service.

The ultimate aim is to go above and beyond, exceeding customers' expectations, and leaving them thoroughly satisfied, wanting for nothing.

Your Day to Day:

  • Ensure wine out of stock lists are up to date with stock availability and vintages
  • Wine cellar Mis en Place complete & clean and service ready
  • Maintains wine stock and par levels
  • Ensures efficient, professional guest experience
  • Communicate efficiently between all departments within the venue.
  • Ensures wastage is kept to a minimum
  • Assists in providing constant management of the venue's budget and cost of goods sold (COGS).
  • Carries out additional duties required to fulfil the position and as requested, this includes hosting and assisting waitstaff with service.

About You:

  • Proven experience in a within a premium or hatted venue
  • A confident and calm demeanour
  • CMS or W-Set Level 2 or above certified
  • A genuine passion for hospitality and being of service
  • Familiar with Italian varietals
  • Strong organisational and communication skills
  • Availability to work a flexible roster, including weekends and evenings
