About the Role:

This is a unique and challenging opportunity for an experienced Sous Chef to join our team as a Banquet Sous Chef. As a key member of our kitchen team, you will be responsible for managing the banquet kitchen and overseeing the planning and directing of food preparation in kitchens. You will work closely with our Executive Chef to deliver exceptional food experiences for our guests and staff, while also supporting the administrative components of the role, including effective rostering of employees, ordering of stock, and development and costing of menus.

Duties and Responsibilities:

  • Manage the banquet kitchen and oversee the planning and directing of food preparation in kitchens
  • Work closely with the Executive Chef to deliver exceptional food experiences for guests and staff
  • Support the administrative components of the role, including rostering, ordering, and menu development
  • Lead and motivate a team of qualified chefs and kitchen stewards
  • Ensure the kitchen is maintained in the highest hygienic standards and well-presented
  • Adhere to all Enterprise Agreement requirements, particularly in relation to rostering
  • Assist with on-the-job training for new team members
  • Keep up-to-date with the latest trends in the food service industry and introduce new ideas regularly
  • Interact positively and professionally with all departments in the hotel

Requirements:

  • Diploma of Hospitality Management or Cert IV in Commercial Cookery or equivalent work experience of 3-4 years
  • Ability to work in a fast-paced kitchen environment
  • Excellent communication and interpersonal skills
  • Team player with a proactive approach to system improvements
  • Knowledge of HACCP and relevant food safety accreditation
