Main Responsibilities
  • Evolve Culinary Standards: Collaborate with the Executive Chef and Sous Chef to develop and implement culinary standards that meet and exceed guest expectations.
  • Train and Develop Team Members: Provide coaching and guidance to team members to enhance their skills and knowledge, and hold regular meetings to share best practices and inspire growth.
  • Manage Rosters and Payroll: Assist the Executive Chef with the management of rosters and payroll costs to ensure efficient and effective kitchen operations.
  • Ordering and Stock Control: Oversee the ordering and stock control process to ensure that local produce is sourced and suppliers are supported to enhance our local community.
  • Plan Promotional Activities: Work with the Sales and Marketing team to plan and execute promotional activities for all food and beverage outlets, events, and promotions.
  • Focus on Hyatt's Top 20 Fundamentals: Collaborate with the Executive Chef to focus on Hyatt's Top 20 fundamentals in food and beverage.
  • Develop a Skilled Workforce: Create a workforce that sees the recruitment, development, and retention of Hyatt's future talent.
  • Support HACCP Requirements: Assist the Executive Chef and Sous Chef in ensuring that all HACCP requirements are met.
Requirements
  • Relevant Experience: Proven experience in a restaurant and/or 5-star hotel environment.
  • Leadership Experience: Demonstrated experience in leading and developing others.
  • Culinary Qualifications: Relevant degree and/or certification in cookery.
  • HACCP Experience: Experience in HACCP standards and procedures.
