Brooklyn Boy Bagels – the producer of Australia's best and most authentic bagels – is looking for a Head Baker within its popular Marrickville bakery to oversee its continued growth in bagels, artisan breads and pastry.
About the Position
Reporting to the Operations Manager, you will be responsible for the day-to-day, hands-on supervision of production whilst working closely with other senior team members. You will be a part of a senior management team that is responsible for driving the company's strategic and operational goals. It is a major advantage in our selection process for you to have strong experience in manufacturing, baking or production management.
Duties & Responsibilities
The Head Baker will oversee all operations within Brooklyn Boy's Marrickville bakery, including bagel & bread production, pastry, driving growth and organizational change. Responsibilities will include:
- Lead daily production of bagels, breads, and pastries to company standards
- Manage and train a team of bakers and production staff
- Oversee dough preparation, proofing, boiling, baking, and finishing processes
- Ensure preventive maintenance and care of bakery equipment
- Develop new products in collaboration with management and the Head Chef
- Drive consistency, efficiency, and continuous improvement across production
- Manage all operations and production outcomes in the Marrickville bakery
- Ensuring financial targets are met, including P&L accountability and cost control, by leading, identifying and executing cost-saving measures
- Actively drive development and improvement of current processes to improve and optimize operations
- Manage quality control of all products that leave the bakery
- Quality Assurance, HACCP compliance and certification, and Work, Health & Safety (OH&S) program management
- Develop a cohesive team culture that reflects a positive work environment
- Recruitment & performance management of your team
- Supervise, train, coach and develop staff to promote a productive environment with a culture of continual improvement
- Procurement and supplier negotiations (equipment + materials)
The Right Person
- Minimum 3 years' experience in a similar role, or experience in running a mid-sized bakery
- Previous manufacturing and production experience highly desired
- Highly self-motivated individual with the capability to work collaboratively with excellent organizational skills and impeccable eye for detail
- Technical skills to continually improve bakery efficiency, hygiene and quality
- Strong leadership and people management skills
- Proven track record of leading a bakery or hospitality team, and the ability to manage a team of 10+ people
- Familiar with HACCP and GMP programs, and a strong understanding of various Australian Food Safety standards
- Financial and commercial acumen – experienced in and controls of wages, margins, P&L, and expenses
- Flexibility to work a combination of mornings, afternoons, evenings, along with weekends and ability to work public holidays.
