Sous Chef – Cooly Breeze Rooftop (Mediterranean Fine Dining)

Cooly Breeze Rooftop is a Mediterranean fine dining restaurant & bar located on level 13 of the Beachcomber International Resort in Coolangatta, offering breathtaking ocean views from Coolangatta Beach to the Tweed River. We pride ourselves on delivering exceptional cuisine in one of the best atmospheres on the coast — and a fantastic place to work.

We are looking for a motivated and passionate Sous Chef to join our family team. This role offers the chance to work closely with our Executive Chef while contributing to pans and grill service, section management, planning, stock control, and ensuring high standards of cleanliness, food safety, and compliance.

Growth Opportunity: For the right candidate, this role could grow into a Head Chef position. This is a genuine opportunity to advance your career while working in a supportive environment.

You will report to the Executive Chef and your responsibilities will include:
  • Cooking on pans and grill.
  • Section and stock management.
  • Supporting menu planning and daily operations.
  • Maintaining a clean, safe, and compliant kitchen.
Requirements:
  • Minimum 5+ years' experience in a similar role.
  • Excellent skills on pans and grill.
  • Strong communication skills and ability to take direction.
  • Organised, structured approach and ability to stay calm under pressure.
  • Professional, reliable, and well presented.
  • Passion for the industry and culinary flair.
  • Flexible availability (nights, weekends, public holidays).
Hours of Operation:
  • Lunch: Friday to Sunday
  • Dinner: Thursday to Monday
  • Closed: Tuesday & Wednesday
