Wine Bar Manager
Opening this November, Annabel's will be a sophisticated yet welcoming neighbourhood wine bar in the heart of Caulfield South. With rustic, moody interiors and a relaxed, community-led atmosphere, Annabel's is designed to feel like a friend's lounge room — comfortable, unpretentious, and quietly confident.
Our wine list will be curated with care, offering a thoughtful mix of familiar varietals and distinctive boutique selections rarely found in mainstream outlets. We pair these with seasonal share plates and a level of service that is warm, genuine, and attentive without pretence.
The OpportunityWe are seeking a hands-on, experienced, and personable Wine Bar Manager to join during the final construction phase and lead Annabel's from pre-opening through to ongoing operations. This is a rare opportunity to shape a venue from the ground up, over wine selection, supplier relationships, and service standards.
Key Responsibilities
• Oversee all day-to-day operations, including staffing, service delivery, and supplier management
• Curate and maintain a boutique wine list
• Collaborate with the Head Chef to develop wine and food pairings
• Lead from the floor, engaging with guests and delivering an exceptional, personalised service experience
• Develop and host wine tastings, wine club events, and private functions
• Recruit, train, and roster your own team
• Monitor sales performance, manage budgets, and participate in regular management meetings
• Minimum 5 years' hospitality management experience, ideally within a wine bar or high-quality venue
• Strong wine knowledge and established industry network — sommelier or WSET certification highly regarded (further training can be provided)
• Warm, approachable, and confident in engaging with guests to build rapport and trust
• Passionate about boutique wines, local producers, and exceptional service
• Skilled in wine and food pairing
• A collaborative, hands-on leader who thrives in a customer-facing role
• Opportunity to establish and lead a brand-new wine bar concept
• Competitive salary
• Wednesday–Sunday roster with minimal late nights
• Support of a reputable hospitality group while enjoying the autonomy of an independent venue
• A venue designed for locals, allowing you to build strong, lasting customer relationships
If you have the expertise, personality, and passion to bring Annabel's to life, we would love to hear from you.
Apply now and be part of creating one of Melbourne's most exciting new wine destinations.
