Sous Chef, Vic's Premium Quality Meat Production Kitchen, Mascot

Vic's Premium Quality Meat (VPQM) is hiring a motivated and experienced Sous Chef for our production kitchen in Mascot, NSW. You will support the Head Chef, work closely with our chefs and butchers, and help produce high-quality prepared items for our retail and foodservice operations. This role suits a hands-on leader who cares about precision, consistency, and exceptional produce.

What you will do

  • Lead daily production with the Head Chef, plan prep and mise en place, and manage batch cooking to spec
  • Maintain product quality, taste, and presentation across all SKUs, with clear labelling and traceability
  • Uphold HACCP, food safety, and WHS standards, including temperature logs and allergen controls
  • Coach and coordinate a small team during busy periods, set the pace, and keep stations organised and clean
  • Monitor yields, portioning, and recipe adherence, assist with inventory, ordering, and waste minimisation
  • Collaborate with butchery on cut selections and readiness for production, align with retail dispatch timelines

What you bring

  • Strong cooking and organisational skills, with a calm, methodical approach
  • Proven ability to lead a team and manage high-volume service or production
  • Solid understanding of recipe costing, yields, and labour control
  • Genuine passion for premium produce and consistency at scale
  • An eye for detail, cleanliness, and continuous improvement
  • 3 years' professional experience preferred
  • English proficiency preferred
