About the role

Parklands Resort Mudgee is seeking an experienced Sous Chef to join our dynamic culinary team. As Sous Chef, you will play a crucial role in supporting the Executive Chef in overseeing the daily kitchen operations and ensuring the delivery of exceptional dining experiences for our guests. This is a full-time position based in the picturesque town of Mudgee, NSW.

What you'll be doing

  1. Assist the Executive Chef in managing all aspects of the kitchen, including menu planning, budgeting, and inventory control
  2. Lead and mentor the kitchen brigade, fostering a positive and collaborative work environment
  3. Ensure the highest standards of food quality, presentation, and consistency are maintained
  4. Monitor food preparation and delivery, making adjustments as needed to meet guest expectations
  5. Contribute to the development and implementation of new menu items and culinary concepts
  6. Adhere to all food safety and hygiene regulations
  7. Assist with training and development of kitchen staff
  8. Collaborate with the front-of-house team to deliver seamless dining experiences

What we're looking for

  1. Minimum 3-5 years of experience as a Sous Chef or in a similar senior culinary role
  2. Strong knowledge of food preparation, presentation, and quality control
  3. Excellent leadership and team management skills
  4. Proficient in menu planning, budgeting, and inventory management
  5. Demonstrable experience in a fast-paced, high-volume kitchen environment
  6. Passion for creating innovative and delicious dishes
  7. Commitment to upholding food safety and hygiene standards
  8. Strong communication and interpersonal skills
