About Us
Bistro Bondi is the newest venue from Appetizing Trade and marks our first step into full-service dining. A casual yet refined Euro-style bistro in the heart of Bondi, it's a place where old-world charm meets fresh, seasonal cooking and relaxed hospitality. Our menu is short, punchy, and designed for sharing, food with care, made from great produce, and served without pretension.
As we gear up for opening, we're looking for a talented Sous Chef to join the opening team and help build something truly special.
The Role
As Sous Chef, you'll work closely with the Head Chef to bring the menu to life and ensure the kitchen runs smoothly. This is a hands-on role in a small, tight-knit team, perfect for someone who thrives in a fast-paced environment and is excited to grow with a new venue. You'll support all aspects of kitchen operations: service, prep, systems, team culture, and quality control.
Responsibilities
- Support the Head Chef in all aspects of kitchen operations
- Assist with food prep, service, and maintaining consistency during busy services
- Lead the team in the Head Chef's absence
- Help implement and maintain kitchen systems: prep lists, cleaning schedules, stock rotation, etc.
- Uphold high standards of food quality, presentation, and hygiene
- Manage ordering and stock control with the Head Chef
- Help onboard and train new staff, setting a positive tone in the kitchen
- Collaborate with the FOH team to ensure smooth and cohesive service
- Be proactive in problem-solving and improving efficiencies
About You
- Experience as a Sous Chef or strong CDP ready to step up
- Passion for quality produce and seasonal, European-style food
- Calm and organised under pressure — a reliable second-in-command
- Good communicator and natural team player
- Confident leading a section and giving direction when needed
- Comfortable with small-team dynamics and hands-on work
- Commitment to high standards of cleanliness, food safety, and kitchen etiquette
- Bonus if you've been part of an opening team before
