We are seeking a chef to build and develop a new and dynamic team at the Dululu Hotel. The historic Dululu Hotel has been completely restored and modernised with class and will be the destination of choice this year. If you have passion and creative flair coupled with solid culinary skills and a propensity for efficient kitchen processes then we have the place for you to shine.

Skills and Qualifications

  • Alacarte including Char Grill experience as a Qualified Chef and a strong understanding of current food trends
  • An eye for detail and passion for flavour and presentation
  • Reliable, punctual and level headed under pressure
  • Ability to communicate and collaborate within a team environment of Chefs, kitchenhands and front to house staff
  • Strong working knowledge of food safety policies and procedure and knowledge of workplace safety systems
  • Qualifications Cert III or IV in Commercial Cookery with minimum one years subsequent experience

Responsibilities

· Maintain a hands-on approach to deliver all food experiences from restaurant dining to functions and events at your nominated location

· Undertake the daily preparation, production and presentation of food.

· Collaborate with the head chef to create menus balanced with flare and efficiency

· Drive continuous improvements that support profit and reputation growth

· Monitor food stocks and stock movement, including stock rotation and preparing stock orders in a timely and efficient manner.

· Ensure mis en place is completed in all sections of the kitchen.

· Manage daily costs of goods including optimising the stock range, minimising kitchen wastage and ensuring efficient labour input costs.

· Accept and store deliveries in accordance to Food Safety guidelines and company policies ensuring all stock is accounted for

· Complete cleaning schedules for the kitchen to ensure all working and storage areas are clean and tidy.

· Responsible for the ongoing training, development and team motivation of kitchen hands whilst maintaining an environment and culture that facilitates learning.

· Ensures that staff grooming and presentation is of a high standard at all times

· Be flexible and willing to help other departments when required

· Complying with all company policies and procedures and all statutory regulations and including Food Safety Standards.

· Maintain a safe workplace and report any health and safety risks and maintenance issues

· Any other reasonable duties required by the Head Chef or Venue Manager

This position is offered by Dawson Hospitality Group Pty Ltd on full time basis and is located in Dululu, Central Queensland 4702. The renumeration for the position is $77,000 - $80,000 per year
