About Us:
Pier Ninety Seven is a vibrant function venue located in Wickham, hosting everything from intimate gatherings to large-scale celebrations. We also operate a small, fast-paced café 'Flatfish Café' specialising in fresh seafood and a variety of tasting menu items. We are seeking an experienced and passionate Head Chef to lead our culinary team, overseeing event catering and supporting the day-to-day operations of the café, while ensuring exceptional food quality and an outstanding guest experience.
Role Overview:
As Head Chef, you will be responsible for delivering exceptional cuisine across multiple formats, including roaming canapés, 2–3 course plated meals, and buffet-style dining for 50–200 guests. You will also assist with the operations of our café, specialising in seafood, and step in to assist during weekly shifts as required. This is a hands-on leadership role, ideal for someone who thrives in both event catering and day-to-day kitchen management.
Key Responsibilities:
- Plan, prepare, and execute high-quality menus for events, including canapés, 2–3 course meals, and buffet service for 50–200 guests.
- Manage and supervise all kitchen operations, ensuring consistency, quality, and efficiency across both event and café services.
- Oversee the café kitchen, specialising in seafood dishes, maintaining high standards of food preparation, presentation, and hygiene.
- Lead, train, and mentor kitchen staff, fostering a positive and productive team environment.
- Work closely with management to plan menus, specials, and catering packages that meet client and business needs.
- Ensure compliance with all food safety, hygiene, and occupational health and safety standards.
- Maintain stock levels, manage food costs, and minimise waste while maintaining quality and portion control.
- Participate in hands-on cooking during events and café service as required.
- Assist with administrative tasks, including scheduling, inventory management, and supplier relations.
Skills & Experience:
- Proven experience as a Head Chef or Senior Chef in a busy kitchen, including event catering experience.
- Strong leadership and team management skills.
- Expertise in seafood preparation and presentation.
- Excellent organisational and time-management abilities.
- Creative approach to menu design and food presentation.
- Strong understanding of food hygiene and safety regulations.
- Ability to work flexible hours, including weekends and evenings, as required for events and café operations.
