We're a Hunter Valley winery with a loyal following, a thriving cellar door, and are
building a food-forward, mini-restaurant operation built around creating memorable
experiences with seasonal plates and great wine.

Role Summary
- Supervise and lead the cellar door as a hospitality-driven venue.
- Own the guest experience, staff performance, presentation standards, and daily service rhythm.
- Balance frontline hosting with back-of-house discipline: rosters, stock, reporting and compliance.
- Cultivate and grow wholesale partnerships.
Key Responsibilities
- Cellar Door and Wholesale Sales & Reporting
- Local/Newcastle/Hunter & targeted Central coast Sydney regions wholesale sales, network at industry events and schedule regular visits approx. 1- 2 days per week.
- Hit weekly sales targets (retail, tastings, experiences, wine club).
- Track KPIs: Average Transaction Value, conversion to Club members, bookings and reviews.
- Daily cash-up, POS reconciliation, wastage logs and incident reports
- Guest Experience & Service
- Host the floor with presence, warmth, and precision—greet, seat, read the room, and resolve issues gracefully.
- Deliver structured tastings, seated experiences, and wine + food service with pace and polish.
- Maintain premium standards in table setting, glassware, presentation, music, lighting, and ambience.
- Drive conversion: tastings-to-sales, wine club sign-ups, add-ons, and return bookings.
Team Leadership
- Recruit, train, roster and coach a high-performing team.
- Run pre-shift briefs, set service standards, and model calm under pressure.
- Uphold accountability: grooming, punctuality, POS accuracy, sequence of service, and closing checklists.
Venue Operations
- Maintain immaculate venue presentation—inside and out—daily.
- Oversee opening/closing procedures, reservations, seating plans, and service flow.
- Coordinate with kitchen/food partners to deliver timely, consistent experiences.
- Manage cellar door stock, tastings supplies, glassware, and retail displays.
Compliance & Safety
- Enforce RSA, food safety, and WHS standards—no exceptions.
- Maintain incident registers and cleaning schedules.
- Ensure staff certifications are current and on file.

Skills & Experience
- 3+ years in venue, restaurant, or premium cellar door leadership.
- Proven team leadership in high-volume, high-touch environments.
- Strong guest recovery and complaint resolution skills.
- Experience with reservations, rostering, POS and basic reporting.
- Wine knowledge essential; formal qualifications a plus (WSET/Certs).
- Current RSA (NSW) required; Food Safety Supervisor advantageous.
