The venue also features function spaces, making it a hub for events and celebrations. Coco's is part of a soon-to-be-launched premium dining precinct, with exciting future career opportunities as new venues open in the precinct.

About the Role:

We are seeking a skilled and experienced Venue Manager / Licensee to lead Coco's on the Beach. Reporting directly to the Director of Premium Dining, you will oversee all operations including F&B, gaming, staffing, compliance, and guest experience. This is a hands-on leadership role for a results-driven hospitality professional who thrives in a premium bar and gaming venue and wants to be part of a growing dining precinct.

Key Responsibilities:
  • Lead all aspects of daily operations across bar, dining, gaming, and functions
  • Ensure compliance with RSA, RCG, and all regulatory requirements
  • Drive financial performance, including cost control, revenue growth, and budget management
  • Recruit, develop, and mentor staff to deliver high standards of service
  • Build strong relationships with guests, stakeholders, and the local community

About You:

  • Current ARCG certification (essential)
  • Proven experience as a Venue Manager or Licensee in a premium bar/gastropub setting
  • Strong knowledge of F&B, gaming, and all operational aspects of similar venues
  • Confident, hands-on leader with excellent communication and team development skills
  • Available to work on a flexible roster including evenings, weekends, and public holidays
