About the Venue

A new family-owned premium steakhouse is opening March 2026. Designed for destination-level dining, the restaurant will seat 60–80 guests in an elegant, moody setting that celebrates craftsmanship, warmth and exceptional food. The owners are committed to quality, professionalism and a positive culture. You'll work closely with ownership and a fantastic kitchen team to deliver a truly memorable experience.

The Opportunity

Starting in late January or early February, this is a pre-opening leadership role for a Venue Manager who can set the standard for service, systems and culture. You'll have a genuine blank canvas to design the guest journey, create your service cycle, recruit and develop your FOH team and build the operational rhythms that deliver a top-class fine-dining experience without the fuss.

Key Responsibilities

• Lead all FOH pre-opening tasks including recruitment, onboarding and training

• Design service standards, SOPs and the full service cycle from open to close

• Build the reservations and floor plan strategy using platforms such as SevenRooms, Resy or OpenTable

• Partner with ownership on the beverage and wine program, cost control and supplier relationships

• Deliver precise daily operations including briefing, section standards and sequence of service

• Oversee rostering, labour control, cash-up, compliance, RSA and incident reporting

• Set and track KPIs for guest satisfaction, labour, COGS and upsell performance

• Collaborate closely with the kitchen to ensure seamless and consistent service

• Be visible on the floor, lead by example and coach your team to anticipate guest needs

Ideal Background

• Proven Venue Manager or Restaurant Manager experience in hatted or premium dining

• Pre-opening experience or a record of building teams and systems that last

• Strong reservations, POS and floor management capability with excellent table-turn control

• Solid beverage knowledge with confidence in premium wine service and pairings

• Commercial literacy across GP, labour, P&L, stock and supplier management

• Calm, organised and detail-driven with outstanding guest communication
