Join our Ladies & Gentlemen - Pastry Chef De Partie
At The Ritz-Carlton, Melbourne, pastry is not just a course - it's a statement of craftsmanship. We are seeking an experienced and passionate Pastry Chef De Partie to help our pastry team in delivering exceptional desserts for both intimate fine dining and large-scale luxury banquets, on a Full-Time basis.

What you'll do:
- Support the Pastry Sous Chef in overseeing the pastry kitchen's daily operations
- Take the lead in plated dessert and banquet menu development, ensuring elegance and consistency in every service
- Demonstrate mastery in working with chocolate, including tempering and artistic presentation
- Manage, train and guide a large and diverse team, fostering a culture of excellence and collaboration
- Uphold rigorous food safety, allergen management, and hygiene standards
- Collaborate cross-functionally with Banquets and Culinary teams to deliver flawless guest experiences
- Maintain inventory, support cost control and manage high production volumes
- Participates in department meetings and continually communicates a clear and consistent message regarding the departmental goals to produce desired results
- Supports and assists with new menus, concepts and promotions for the Restaurant outlets and Banquets.
Who we're looking for:
- A confident and capable leader with at least 3 years of experience in pastry, including team leadership
- Prior experience in a luxury 5-star hotel or high-end venue with large banquet operations
- Deep technical knowledge and creativity in contemporary and classic patisserie
- Strong organisational skills, calm under pressure, with a hands-on approach to service
- A natural trainer and mentor who brings out the best in others
- Certificate IV in Patisserie or equivalent
- Availability to work full-time, across shifts including weekends and public holidays
