Brunetti Oro is currently seeking an experienced, qualified and passionate Chef de Partie to join the dynamic culinary team at our flagship Flinders Lane venue.
If you are passionate about Italian cuisine, have significant experience in the delivery of traditional and modern Italian dishes, and thrive in a fast-paced kitchen environment this is the role for you.

About the role:
The Chef de Partie is responsible for supporting the Head Chef in the daily operation of the Flinders Lane Kitchen, demonstrating significant knowledge and expertise in traditional, and modern Italian cuisine, and the ability to work confidently and autonomously to deliver a premium product and service.
The role reports directly to the Head Chef and is responsible for providing guidance, leadership, and quality assurance in the Flinders Lane Kitchen, with the support of the Head Chef.
The Chef de Partie will lead the team by example in daily operations, demonstrating skills, expertise, and a hands-on approach to the delivery of premium Italian dishes with precision, consistency and creativity.
Quality is paramount. The Chef de Partie is responsible for quality assurance at the pass, maintaining high culinary standards, and ensuring an authentic, premium food experience is delivered consistently to Brunetti Oro customers.
The Chef de Partie is responsible for supporting the Head Chef with daily kitchen operations, providing quality assurance and leadership, and contributing to the success and growth of Brunetti Oro through the utilization of specialist skills and knowledge of Italian cuisine.
In order to be successful for the position, you must possess the following:
- Diploma/Certificate III in Commercial Cookery plus 2-3 + years experience as Chef de Partie in a fast paced premium a la carte restaurant
- Demonstrated knowledge of traditional and modern Italian cuisine
- Demonstrated superior standards of food preparation, production and presentation, utilizing your specialist skills to deliver a premium Italian food experience
- Demonstrated experience managing the pass and implementing quality assurance measures to ensure precision and consistency in presentation and flavour
- Demonstrated ability to work confidently and autonomously, providing team leadership in the execution of kitchen operations, and management of the pass
- Demonstrated ability to multi-task, operate well under pressure and role model behaviours in the preparation and delivery of premium Italian dishes
- Demonstrated product knowledge and culinary function
- Demonstrated organizational and communication skills, ensuring the provision of clear instruction and expectation to ensure efficient workflow and premium product delivery from the Flinders Lane kitchen
- Demonstrated experience with par-level management, stock rotation, waste management and ordering (if required) 
- Demonstrated ability to work in a team-driven environment, to take direction, offer direction, and assist with problem solving, innovate, share and respectfully consider ideas 
- Demonstrated ability to ensure customer satisfaction through the preparation, and delivery of a premium Italian food offering with accuracy, precision and consistency
- Understanding of food safety standards
