We are seeking an experienced and passionate Head of Viennoserie, you will play a pivotal role in curating an exceptional bakery experience for our guests. You will lead the viennoiserie and bakery team, ensuring a high standard and consistent production of pastries and sweets that align with the Antara brief and vision. The role will demonstrate creative flair and attention to detail whilst equally an acute business acumen and understanding of the business as a whole.

About Us

Warm and welcoming, ANTARA is a bakery and eating house open from dawn to dusk. The service moves through the day, starting with the on-site bakery in the morning before progressing into the restaurant for lunch and dinner. Expect to work with honest ingredients, pasta and a woodfire. Laidback, yet with polish to our service, we're a touch of Europe mixed with Melbourne.

The Opportunity

Reporting directly to the Culinary Director, you will collaborate closely with the kitchen management team to lead creativity, harmonise flavours, textures, styles, and presentation, contributing to the overall success, reputation and further development of the Antara bakery identity.

Key Responsibilities:

  • Oversee the entire production of viennoiserie and pastry items for Antara bakery.
  • Prepare and bake a variety of viennoiserie, pastries, sweets and other baked goods.
  • Weigh, measure, and mix ingredients accurately to ensure consistency and quality in the finished products.
  • Monitor sales performance and strategy to maximise a product that meets our clienteles needs.
  • Operate bakery equipment and machinery in a safe and efficient manner.
  • Monitor baking processes, including temperature and baking time, to achieve optimal results.
  • Troubleshoot any issues and make decisions to rectify for the best of the business
  • Prepare and distribute production schedule in-line with business demands
  • Develop a schedule and Calendar of products/releases to highlight key promotions and activations
  • Prepare and distribute a detailed ingredients and dietary matrix list vital to our food safety plan.

  • Proven leadership skills, with the ability to inspire, mentor, and guide a team to success.

  • Flexibility and adaptability, with availability to work weekends, public holidays, and a dynamic schedule as required.
  • Exceptional communication skills, fostering collaboration across multiple departments while maintaining a positive and supportive work culture.
  • A high level of organization, time management and attention to detail, ensuring consistency and excellence in a fast-paced environment.
  • A willingness to learn, with an openness to new techniques, recipes, and industry trends. Whilst creativity to contribute fresh ideas for flavours, designs, and presentation.
  • A deep understanding of kitchen operations, including food safety, OH&S compliance and best practices. As well as the ability to stand for extended periods and operate bakery equipment safely.
