Full Time Chef required at Skenderbar Pty Ltd trading as Limerick Castle Hotel.

Key Responsibilities:

  • Prepare and cook high-quality dishes according to the restaurant's standards and menu specifications.
  • Oversee kitchen operations, ensuring the kitchen runs smoothly and efficiently.
  • Manage kitchen hygiene and cleanliness, strictly adhering to HACCP rules and food safety regulations.
  • Handle stock management, ensuring the kitchen is fully stocked with necessary ingredients, and monitor stock rotation to prevent waste.
  • Maintain relationships with suppliers and manage orders to ensure timely delivery of fresh ingredients and supplies.
  • Assist in the creation and development of the menu, with a focus on seasonal ingredients and creative dishes that align with the restaurant's style and standards.
  • Collaborate with the team to create and update seasonal menus, offering new and exciting options for guests.
  • Supervise and mentor junior kitchen staff, ensuring high-quality standards are maintained at all times.
  • Monitor kitchen operations to ensure the timely delivery of dishes and maintain high food quality and presentation.
  • Ensure that kitchen equipment is maintained and functioning properly.

Qualifications and Skills Requirements:

  • Certificate IV in Commercial Cookery (or equivalent).
  • Minimum of 1 year of experience as a Chef in a professional kitchen.
  • Strong knowledge of food safety, kitchen hygiene, and HACCP guidelines.
  • Experience in Cooking, managing stock, ordering supplies, and working with suppliers.
  • Strong creative skills in menu development and seasonal menu planning.
  • Ability to lead and manage kitchen staff in a fast-paced environment.
  • Excellent organizational and communication skills.
  • A genuine passion for food and culinary innovation.

Job Type: Full-time

Pay: $75,000.00 – $80,000.00 per year
