We're seeking a driven Senior Sous Chef ready to step up into a Head Chef role within a high-performing production kitchen environment. This position is ideal for a chef with strong technical skills, proven leadership ability, and a passion for operational excellence.

You'll work closely with the General Manager and some of Australia's leading chefs, ensuring quality, efficiency, and consistency across all menu items. This role offers the chance to contribute directly to the growth and success of a fast-moving business built on quality, teamwork, and precision.

Key Responsibilities

·      Lead day-to-day kitchen operations to deliver consistent, high-quality production across all product lines.

·      Work hand-in-hand with the General Manager to align kitchen output, costing, labour planning, and process improvement with overall business goals.

·      Develop and refine recipes and menus in collaboration with senior chefs to ensure flavour consistency, portion accuracy, and efficient scalability.

·      Oversee production schedules, workflow, and team performance to meet daily and weekly targets.

·      Maintain strict compliance with HACCP and Food Safety Standards, including documentation, audits, and staff training.

·      Manage stock levels, supplier relationships, and raw material ordering to minimise waste and optimise cost.

·      Train, mentor, and motivate a small, dedicated kitchen team — fostering a culture of accountability and continuous improvement.

·      Collaborate with management on new product development, seasonal updates, and large-scale production projects.

Skills & Experience

·      Proven background as a Senior Sous Chef or Production Kitchen Supervisor in a high-volume or premium food environment.

·      Strong knowledge of menu and recipe development with a practical understanding of cost control and scaling.

·      Comprehensive understanding of HACCP, Food Safety, and compliance requirements.

·      Demonstrated ability to lead, organise, and motivate small teams in a structured, fast-paced kitchen.

·      Confident working with targets, batch production schedules, and KPI-driven systems.

·      Excellent communication and collaboration skills — especially in working with management to improve operations.

·      Passion for producing high-quality, consistent food at scale.
