About the Role:

We are seeking an experienced and dynamic Restaurant Manager to lead Ammos, our award-winning Greek dining destination at Novotel Sydney Brighton Beach. Reporting to the Venue Manager, you will oversee daily restaurant operations, ensuring service excellence, financial performance, and a thriving team culture. This is an exciting opportunity for a results-driven hospitality professional who thrives in a high-end dining environment and wants to be part of a venue that sets the standard for coastal dining.

Key Responsibilities:

  • Lead daily restaurant operations to deliver seamless service and exceptional guest experiences
  • Drive financial performance through effective cost control, budgeting, and revenue growth strategies
  • Recruit, train, and mentor a high-performing team, fostering accountability and collaboration
  • Manage rostering, payroll, stock control, and ordering to ensure efficiency and profitability
  • Partner with the Head Chef and Venue Manager to develop promotions, events, and initiatives that drive engagement and business success

About You:

  • Previous experience as a Restaurant Manager in a premium or high-end à la carte dining environment
  • Hands-on leader with strong team development and communication skills
  • Deep understanding of high-level service standards and passion for creating exceptional guest experiences
  • Strong financial and operational acumen, including rostering and cost management
  • Current RSA certification and the ability to thrive in a fast-paced, high-pressure environment
