The Role

Reporting to the Executive Chef, you will be part of the culinary leadership team responsible for ensuring the smooth and effective running of the hotel's culinary operation across multiple restaurants, bars, room service, banquets and stewarding.

To be successful you will have:

  • Extensive experience as a Sous Chef or similar in a hotel environment
  • A hands-on and collaborative approach to leading, coaching and inspiring a large culinary team
  • A genuine passion for food and cooking with experience across different cuisines, service styles and cooking techniques
  • A creative and innovative flair for preparing high quality cuisine that delights our guests
  • An energetic and proactive enthusiasm to further develop your culinary expertise
  • Strong financial acumen with proven ability to manage a profitable department
  • A team player who easily builds rapport with colleagues and guests alike
  • Ability to remain calm and professional under pressure in a busy fast-paced environment
  • A comprehensive understanding of food safety requirements, including HACCP
  • Flexibility to work a variety of shifts including nights, weekends and holiday periods
  • Relevant trade qualification – Cert IV in Commercial Cookery, or equivalent
  • Citizenship, permanent residence or approved working rights in Australia
