Only Hospitality Group is seeking a passionate and motivating Sous Chef to help lead our Pub Kitchen Team. With a landmark Melbourne Pub slated to open in December, and a legacy of venues including locations across Belgrave, Hawthorn, Williamstown, Collingwood and South Yarra, there are many opportunities for innovation and growth.

Our devotion to the Australian Pub runs deep, and our kitchens take great pride in sourcing local ingredients to produce everything from wood-fired octopus to whole barramundi, whilst honouring and paying homage to the pub classics. Each Pub menu is a love letter to the schnitty and the parma, with an Only twist. Now we just need you.

About the Role:

We are seeking a passionate, driven and creative Sous Chef who will work closely with the Head Chef to oversee kitchen operations, maintain high culinary standards, and deliver a quality pub dining experience. You will be hands-on in service, support junior chefs, and ensure consistency across all dishes.

Key Responsibilities:

  • Lead in daily kitchen operations, prep, and service
  • Lead and train BOH team members to achieve excellence
  • Demonstrate excellent food safety, hygiene, and quality standards consistently
  • Manage stock control, ordering, and kitchen organisation
  • Collaborate with management to refine and execute seasonal menus
  • Understanding and adherence to financial budgets, food and labour costs

About You:

An obsession with the Melbourne Pub and dining scene is both favourable and lowkey essential. We want to hear about where you love to eat; where you source ingredients and inspiration; where you go for a pint and a parma.

We Are Also Looking For:

  • Proven experience as a Sous Chef or in a similar leadership role
  • Strong cooking skills with attention to quality and presentation
  • Ability to work efficiently under pressure in a busy service
  • Excellent communication and leadership skills
  • Flexibility to work across various venues and shifts
