Job Description

We are seeking a highly skilled and experienced Sous Chef to join our team in Brisbane. As a key member of our culinary team, you will be responsible for planning and directing food preparation, supervising staff, and ensuring high-quality dishes are produced consistently.

The successful candidate will have excellent leadership skills, with the ability to provide on-the-job training to lower-level staff members and execute and supervise food production, packing, and tray-set activities efficiently.

You will work closely with our team to prepare complex meals or dishes to specifications provided and monitor and ensure compliance with recipe specifications and KPIs across the business.

In addition, you will be responsible for monitoring and controlling labor costs, food costs, and shrinkage, as well as participating in the development of new food products and menus as needed.

Main Responsibilities:
  • Plan and direct food preparation and supervise staff.
  • Execute and supervise food production, packing, and tray-set activities.
  • Prepare complex meals or dishes to specifications provided.
  • Monitor and ensure KPI compliance across the business.
  • Monitor and control labor, food costs, and shrinkage.
Requirements:
  • Demonstrated success in a similar role as a Sous Chef.
  • Trade qualified Chef with at least 3 years' experience in a high-volume food production environment.
  • Advanced knowledge of HACCP / QSAI / Food Safety and OHS principles.
  • Prior experience working in a team environment with demonstrated leadership skills.
  • Prior experience in a HALAL working environment and knowledge regarding segregation and separation of equipment.
  • Good financial understanding and cost-consciousness.
  • Strong communication and organizational skills.
  • Good knowledge of Microsoft Office and Windows-based computer applications.
  • Availability to work 38 hours/week.
