Alma Nove Launch Team - Sous Chef

We are seeking a highly skilled and experienced Sous Chef to join our launch team at Alma Nove, the newest fine dining spot on Manly beach.

Key Responsibilities:
  • Oversee and direct the preparation and production of meals in the restaurant;
  • Manage and coordinate food supply and stock ordering;
  • Assist the head chef in new menu production and menu tasting;
  • Ensure effective stock purchasing and waste control;
  • Assist in the training and mentorship of junior and apprentice chefs;
  • Oversee the writing and costing of all kitchen rosters via Tanda;
  • Set high levels of work ethic standards by adopting a 'Hands On' management style;
  • Produce all dishes to a consistent standard;
  • Ensure all kitchen activities meet the organizational requirements for quality management, health and safety.
Requirements:
  • At least 2+ years experience in a similar role with relevant experience;
  • Ability to work independently and as part of a team;
  • Ability to work at a fast pace and high volume environment;
  • High energy, passionate with a strong work ethic.
