As a key member of our kitchen leadership team, you will be responsible for supporting the Chef de Cuisine in the day-to-day running of the department, ensuring consistency across every meal, and mentoring and supporting junior team members.

Key Responsibilities:

  • Support the Chef de Cuisine in the day-to-day running of the kitchen, including menu planning, inventory management, and staff supervision.
  • Ensure consistency across every meal, maintaining high standards of quality and presentation.
  • Mentor and support junior team members, including Demi Chefs, Commis Chefs, Apprentices, and Cooks, to develop their skills and knowledge.
  • Collaborate with the Chef de Cuisine to develop and implement new menu ideas and concepts.
  • Contribute to the development and implementation of kitchen policies and procedures.

Requirements:

  • Proven experience as a Chef, with a strong background in high-volume cooking and menu planning.
  • Relevant tertiary qualifications, such as a Certificate IV in Commercial Cookery.
  • Knowledge of a variety of cooking styles and techniques, including modern Australian cuisine.
  • Strong understanding of produce, culinary techniques, and kitchen equipment.
  • Excellent communication and interpersonal skills, with the ability to lead and motivate a team.
  • Full working rights to commit to a minimum of 40 hours per week, working varied shifts, including weekends, public holidays, late nights, and early mornings.
