About the Role:


We are seeking a highly skilled Sous Chef to join our dynamic kitchen team at The Grace Darling Hotel.


The successful candidate will work closely with the Head Chef to lead our talented team, driving creativity and consistency in every dish.


Key Responsibilities:



  • Assist the Head Chef in planning and organizing kitchen operations to ensure seamless delivery of high-quality meals.
  • Supervise and train kitchen staff to maintain exceptional standards of quality, presentation, and teamwork.
  • Contribute to menu development, focusing on fresh, seasonal, and locally sourced ingredients to deliver innovative and delicious dishes.
  • Develop and refine recipes to ensure flavor balance, consistency, and creativity, while adhering to food safety and hygiene regulations.
  • Manage inventory, ordering, and budget control to optimize kitchen efficiency and minimize waste.
  • Oversee the daily preparation and presentation of meals, ensuring consistent quality and presentation.
  • Collaborate with front-of-house staff to provide exceptional dining experiences that exceed customer expectations.
  • Monitor kitchen workflow, ensuring the team adheres to high standards during peak periods and resolves any issues promptly.

Requirements:



  • A minimum of 3 years of full-time work experience as a Sous Chef or in a similar role, preferably in a high-volume, premium setting.
  • Certificate IV in Commercial Cookery and Diploma of Hospitality Management or equivalent qualifications.
  • Excellent leadership, communication, and time-management skills, with a passion for seasonal, locally sourced ingredients and innovative cooking.
  • Ability to work effectively under pressure in a fast-paced environment, with a strong focus on teamwork and customer satisfaction.
