About the Role:

The Grace Darling Hotel is seeking a highly skilled Sous Chef to join our dynamic kitchen team. As a key member of our culinary team, you will work closely with the Head Chef to lead our kitchen operations, ensuring exceptional quality and presentation in every dish.

Key Responsibilities:

  • Assist the Head Chef in planning, organizing, and managing kitchen operations to maintain high standards of quality and presentation.
  • Supervise and train kitchen staff to ensure consistency and excellence in every aspect of food preparation and presentation.
  • Contribute to menu development, focusing on fresh, seasonal, and local ingredients to create innovative and delicious dishes.
  • Develop and refine recipes to ensure flavor balance, consistency, and creativity, while adhering to food safety and hygiene regulations.
  • Manage inventory, ordering, and budget control to optimize kitchen efficiency and minimize waste.
  • Oversee the daily preparation and presentation of meals, ensuring consistent quality and presentation.
  • Collaborate with front-of-house staff to provide exceptional dining experiences and ensure seamless communication between kitchen and service teams.
  • Monitor kitchen workflow, ensuring the team adheres to high standards during peak times and resolves any kitchen-related issues swiftly to maintain smooth operations.

Requirements:

  • Minimum of 3 years of full-time work experience as a Sous Chef or in a similar role, ideally within a high-volume, premium setting.
  • Certificate IV in Commercial Cookery and Diploma of Hospitality Management.
  • Excellent leadership, communication, and time-management skills, with a passion for seasonal, locally sourced ingredients and innovative cooking.
  • Ability to work effectively under pressure in a fast-paced environment, with a focus on maintaining high standards of quality and presentation.
