Executive Sous Chef Job Description

We are seeking a highly skilled and experienced Executive Sous Chef to lead our culinary team in a 4 or 5-star Hotel/Resort setting.

This is a fantastic opportunity for an accomplished chef with strong leadership skills to take charge of the kitchen, oversee menu creation, and train up to 40 employees. The ideal candidate will have formal qualifications in Commercial Cookery or equivalent, as well as extensive experience in middle to upper-level management within a large hotel or resort environment.

The successful candidate will be responsible for:

  • Balancing personal preparation of high-quality food with supervising and directing all kitchen personnel.
  • Interacting with internal and external customers and suppliers.
  • Ensuring product quality and service standards are consistently high.
  • Working closely with the Executive Chef on menu creation.
  • Training and developing up to 40 employees – Chefs, Apprentices, and other kitchen staff.
  • Ensuring compliance with workplace health and safety requirements at all times.
  • Controlling and analyzing departmental costs on an ongoing basis.

The Executive Sous Chef will also be expected to devise initiatives and strategies to ensure financial targets are met, work effectively with the executive team to drive business growth, and contribute to maintaining the highest levels of customer satisfaction.

Required Skills and Qualifications

To be considered for this role, you must possess:

  • Formal qualifications in Commercial Cookery or equivalent.
  • Experience in middle to upper-level management within a large 4 or 5-star Hotel/Resort.
  • Thorough knowledge of Food Safety and other workplace health and safety practices.
  • A current WA motor vehicle driver's license.
