The Job

Skyfeast is a luxurious buffet dining experience located 82 floors above ground level at the iconic Sydney Tower. Guests enjoy breathtaking 360-degree views as they dine on contemporary Australian cuisine with an international flair, featuring over 30 international dishes at various stations including seafood, antipasto, sushi, roasts, Mediterranean, and desserts.

We are currently seeking a seasoned Executive Culinary Leader to join our busy production kitchen brigade in a hands-on role based on a 7-day rotating roster. In the Head Chef's absence, this senior role will see you lead the kitchen team, making it suitable for an experienced chef looking to take on new challenges in a renowned venue.

The Role Encompasses:

  • Culinary Leadership and Preparation of Dishes
  • Team Management - Hiring, Training, and Development
  • Roster and Timesheet Management
  • Menu Planning
  • Ensuring Compliance with WHS, Food Safety, Employment Laws
  • Managing Food Orders and Inventory

You

To be successful in this role, you must have;

  • A minimum of 2 years' experience as a Sous Chef or in a culinary leadership role
  • Previous work experience in a high-volume a la carte restaurant, buffet, or hotel with similar standards focused on quality food production
  • A positive leadership style with the ability to lead by example
  • An interest in menu development for an international cuisine buffet
  • Basic computer skills, including word processing, Excel, and email
  • A sound knowledge of OH&S, HACCP, Par levels, stock control, ordering, and stock taking
  • The desire to learn and develop under highly experienced chefs within Trippas White Group
  • Clear and precise communication skills, both written and oral
  • Immaculate grooming and a good standard of personal hygiene
  • A strong understanding of food and labor cost controls
  • Motivation and the ability to make decisions under pressure in a fully operational kitchen
  • Flexible availability, including a 7-day rotating roster with lunch and dinner shifts
