As a key member of our culinary team, you will oversee the planning and direction of food preparation in our busy kitchen environment. This involves supervising other kitchen staff, addressing operational issues, and ensuring consistent production of high-quality dishes.

We are seeking a highly skilled and experienced Sous Chef to join our team at Sydney Airport. Your role will involve:

  • Evaluating and implementing efficient kitchen procedures to meet demanding production requirements.
  • Scheduling and directing food preparation, including ordering necessary ingredients and equipment on a daily basis.
  • Providing on-the-job training to junior staff members and monitoring their performance.
  • Executing and supervising food production, packing, and tray-set activities while adhering to recipe specifications and quality standards.
  • Preparing complex meals or dishes to provided specifications and maintaining exceptional quality standards.

To succeed in this position, you must possess:

  • Trade-qualified Chef experience with a minimum of 2 years in a high-volume food production environment.
  • Advanced knowledge of HACCP / QSAI / Food Safety and OHS principles.
  • Prior experience working in a team environment with demonstrated leadership skills.
  • Prior experience in a HALAL working environment, including segregation and separation of equipment.
  • Good financial understanding and cost consciousness, as well as strong communication and organizational skills.
